Grilled Garlic Butter Mussels
Serves 2-4 (side dish)
Ingredients:
- Half kilo fresh mussels, cleaned and debearded 
- 4 tablespoons butter, melted 
- 3 cloves garlic, minced 
- 1 tablespoon lemon juice 
- 2 tablespoons fresh parsley, chopped 
- 1/4 cup Parmesan cheese, grated 
Instructions:
- Preheat your grill to medium-high heat. 
- In a pot or pan with a lid, add about 1/4 cup of water and heat up. Add the mussels and steam for about 3-4 minutes or until the mussels have opened. 
- Once steamed, carefully remove the mussels from their shells, leaving one half of the shell intact with the mussel meat. Arrange the mussels on a baking sheet or grill-safe dish. 
- In a small bowl, combine melted butter, minced garlic, lemon juice and chopped parsley. Mix well. 
- Spoon a generous amount of the garlic butter mixture over each mussel. Place the half-shelled mussels under the grill. 
- Grill the mussels for about 5 minutes, or until the garlic butter is bubbling. Sprinkle grated Parmesan cheese over the mussels during the last minute of grilling. 
- Take tray out from under the grill and serve immediately!
