Steamed Mussels in Chilli Tomato Sauce.
Serves 2-4
Ingredients:
- 2kg fresh mussels, cleaned and debearded 
- 1 tablespoon olive oil 
- 2 cloves garlic, minced 
- 1 brown onion, diced 
- 2 small red chillies, deseeded and chopped (option to choose as much or little as you like depending how much heat you like) 
- Can of crushed tomatoes or passata 
- 1/2 cup dry white wine 
- 1/4 cup chopped fresh basil 
- Salt and pepper to taste 
- Crusty bread (optional for serving) 
Instructions:
- To cook sauce: In a pot heat the olive oil over medium heat and add the garlic, onion and chilli and cook stirring for around 2 -3 minutes until fragrant or the onion softens. Add the white wine and cook for around a minute until evaporated. Add the can of crushed tomatoes and stir. Increase heat to high to bring to a boil and then reduce heat to let the sauce simmer for around 10-15 minutes. Season with salt and pepper. 
- In a separate pan or wok with a lid: Heat up the pan and add a quarter cup of water. Add the mussels (don’t overcrowd the pan, if too many do in two batches). Cover the mussels with a lid and leave to steam undisturbed for around 4 minutes until the mussels start opening. Once the mussels have opened take off the heat and add to your serving bowl. 
- Pour the sauce over the cooked mussels and garnish with chopped fresh basil. Serve with fresh toasted crusty bread and enjoy!
